The aged cacioricotta from Tenuta Principe Mazzacane is a goat's cheese with a unique and intense flavour, the result of an ancient dairy tradition in Cilento.
Characteristics:
- Milk: Produced exclusively with raw milk from Cilento goats, a native breed raised in the wild and fed on wild herbs. This gives the cheese a rich and aromatic flavor, with herbaceous and slightly spicy notes.
- Maturing: Maturing takes place in natural caves for at least 30-40 days, during which the cheese develops a natural crust and a compact paste. This process gives cacioricotta a more intense and complex flavor, with notes of dried fruit and spices.
- Appearance: The paste is ivory white in color, with a compact and slightly grainy consistency. The rind is thin and straw yellow in color.
- Flavor: The flavor is intense and distinctive, with notes of fresh milk, aromatic herbs and a slightly spicy aftertaste. The maturation gives the cheese a unique aromatic complexity.
