The fresh cheese production process is entirely manual and respects ancient dairy traditions. Freshly milked milk is heated at a low temperature and natural rennet. The curd, delicately broken, is placed in moulds and left to drain. Subsequently, the cheese is salted and left to rest for a few hours before being packaged.
